Olive oil

1 small onion, chopped

3 garlic cloves, 1 crushed and 2 thinly sliced

1tbsp Heinz tomato puree

2x 400g tins Heinz chopped tomatoes

3 sprigs fresh basil, roughly chopped

3 medium tomatoes, chopped

360g mezzi rigatoni

Salt and black pepper

Small fresh basil leaves to garnish

METHOD
1.

Fry the onions in 2 tablespoons of the olive oil until soft and just golden. Add the crushed garlic and stir-fry for 30 seconds. Add the tomato puree and cook for a further minute, stirring all the time.

 Add the tinned chopped tomatoes, chopped basil and seasoning. Simmer over low heat for 15 minutes, stirring occasionally.

 Once the sauce is ready, cook the pasta in boiling salted water according to packet instructions. Drain the pasta and toss with 1 tablespoon of olive oil.

 While the pasta is cooking, fry the garlic slices in the remaining olive oil until just golden. Add the fresh chopped tomatoes and cook for 30 seconds, until the tomatoes are beginning to soften. Season to taste.

 Spoon the tomato sauce into the bottom of a shallow bowl. Arrange the pasta on top and spoon over the fresh tomato and garlic. Garnish with fresh basil leaves.
