 Mexican Style Chilli Rice Bake

500g Heinz Chilli Tomato Base

500g mince meat

1 large white onion, diced

4 cloves garlic, diced

1 green pepper, chopped

2 tbsp tomato puree

2 tsp oregano

Salt and pepper to taste

200-300ml beef stock

250g washed white long grain rice

200g shredded cheese

METHOD
1.

Fry off beef mince, onion, peppers and garlic.

 Add in Heinz tomato base, oregano salt and pepper, beef stock and rice.

 Mix everything together, pop a lid on and oven bake (or cook on the hob) for about 35-45 mins - until everything is absorbed and cooked through.

 Finally top with cheese and bake again for another 10 mins - until cheese is golden and melted (again you can do this on the hob, you won’t get the golden crispness, but you will get the melt!

 Garnish with fresh coriander.
6.
 Serve with salad, sour cream and guac, and fresh lime.
