300g Orzo

250ml Heinz basil passata

150g mixed olives, chopped

2 small red onions, roughly chopped

1 red bell pepper, roughly chopped

1 orange bell pepper, roughly chopped

4 cloves garlic, finely chopped

1 fresh lemon

6 chicken thighs

200ml Stock

METHOD
1.

Add veg, orzo, 1 tbsp each paprika and oregano, passata, lemon juice from half of the lemon and stock to a baking dish  

2.
Mix everything together and season with salt and pepper 
3.
Top with chicken thighs and slices of lemon  
4.
Sprinkle over remaining 1 tbsp each paprika, oregano, and salt and pepper
5.
Bake for around 30 mins - until orzo is cooked, thighs are done and everything is piping hot  
6.
Push back in and garnish with lots of fresh herbs, and feta cheese to serve 
7.
Serve with a fresh side salad for the perfect summer meal!
