225g Halloumi

1 Lemon

Olive Oil

Mint

1 Courgette

2 Red Peppers

1 Red Onion

Tenderstem Broccoli

Parsley

Basil

Heinz Salad Cream

METHOD
1.

Prepare the Halloumi by chopping it lengthways. In a bowl mix the olive oil, lemon juice and mint. Add the halloumi, cover in cling film and leave to marinate for 2 hours.

 Cut the courgette, red pepper, red onion and tender stem broccoli and arrange on a roasting tray. Pour over some olive oil and season with the parsley & basil.

Preheat Grill to 220 degrees and Oven to 180 degrees.

Place all the veg in the oven and roast for 15 minutes. Grill Halloumi for 6 minutes on each side until slightly browned.
5.
Plate up the roasted veg and halloumi and add a the juice of one lemon, a little fresh mint and drizzle of Heinz Salad Cream to serve.
