 Beetroot Falafel, Grilled Halloumi and Creamy Hummus Pita

INGREDIENTS

1.5 cans chickpeas or garbanzs, rinsed and drained

125ml Heinz [Seriously] Good Mayonnaise

60ml water

3 cloves garlic, finely chopped

30ml Lemon Juice

3 Tablespoonsl Tahini

1/4 Tsp. Ground Cumin

Ground Black Pepper

1 red beet (Peeled and quartered)

1/4 Cup all-purpose flour

Parsley

2 Pitas

70g Halloumi

METHOD
1.

Start by making the beetroot falafel. Preheat the oven to 400 degrees.

2.
Add the beetroot, chickpeas, garlic, tahini, flour, parsley and cumin to a food processor.
3.
Pulse until the mixture comes together but it doesn't need to be a smooth paste.Season with salt and pepper.
4.
Form balls and place on a baking sheet lined with parchment paper.
5.
Bake for 30 minutes.
6.
Create the hummus by adding the chickpeas, water, garlic, lemon juice, tahini, cumin, pepper and Heinz [Seriously] Good Mayonnaise to a food processor and blend until smooth.
7.
Heat a griddle pan to a high temperature and griddle the halloumi slices for 1 minute on each side.
8.
Spread each wrap with the Hummus and then add the Beetroot Falafels and Halloumi.
9.
Top with rocket then wrap or roll your pita and serve with salad.
