KEBAB SKEWERS

1 LARGE COURGETTE (SLICED INTO 1 CM DISKS)

2 PACKS OF ORIGINAL BEANZ BURGERZ

200G CHESTNUT MUSHROOM (SLICED IN HALF)

2 LARGE RED ONIONS (PEELED AND QUARTERED)

200G BABY CORN (CHOPPED IN HALF)

1 YELLOW PEPPER (DESEEDED AND SLICED INTO LARGE CHUNKS)

1 GREEN PEPPER (DESEEDED AND SLICED INTO LARGE CHUNKS)

200G CHERRY TOMATOES

TZATZIKI

1 LARGE TUB OF PLAIN YOGHURT (COULD USE VEGAN YOGHURT TO MAKE VEGAN SKEWERS)

1 LARGE CUCUMBER

1 CLOVE OF GARLIC

½ LEMON (JUICED AND ZESTED)

1 SPRIG OF FRESH MINT (OR A TEASPOON OF DRIED MINT)

1 TSP OF SALT & PEPPER

A DRIZZLE OF OLIVE

METHOD
1.

Preheat your grill on the maximum setting and place a rack directly underneath it. If cooking in an oven, preheat your oven to 200°C (180°C fan assisted).

Once the oven is warm, place the frozen Beanz Burgerz on a baking tray and cook through, following the instructions on pack.

While your burgers are cooking, chop up all your vegetables.

Once all of your veggies are prepared, and the Beanz Burgerz are cooked through, remove the burgers from the oven, allow to cool slightly, and slice into large chunks (6-8 chunks per burger).

Carefully add all of your chopped veggies and beans burgers to skewers, alternating the colours, and brush with olive oil. Season generously with salt and pepper.

Place your loaded skewers under the preheated grill and turn regularly until the vegetables begin to brown and your Burgerz are sizzling. If cooking in the oven, roast for 25 mins, turning your kebabs once every 5 mins.

While your skewers are cooking, grate a large cucumber into a pile and using your hands, squeeze out as much water as you can. Using the same grater, grate a garlic clove. In a large bowl, combine the squeezed cucumber, grated garlic, and your tub of (vegan) yoghurt.

Using a zester, remove the zest of half a lemon then juice and add to the bowl of yoghurt. Sprinkle in with your choice of mint, season generously with salt and pepper, stir and then finish with a drizzle of olive oil.
9.
Once your kebabs are cooked remove them from the oven and place on a plate allowing two skewers per person. Drizzle a little of the Tzatziki over the top and serve.
