1 x Red onion (cut into 6 wedges).
1 x Butternut squash diced.
1 x Courgette batons.
1 x Red pepper diced.
- Serves: 4
- First prepare all the vegetables and place in a roasting dish.
- Roast in a pre-heated oven, 180°C for 20 mins (approx.)
- 5 minutes before the end of the cooking, squeeze on 2 tbsp of the Heinz Peri Peri Sauce, give it a stir and return to the oven to glaze.
Great served hot with roasted chicken or fish or cold as a salad.
