2 tbs red chilli flakes

2 minced garlic clove

1 tbs chopped fresh ginger

1 chopped shallot

1/2 bunch of coriander stalks

2 tbs caster sugar

2-3 tbs Thai Fish Sauce

6 tbs Rice Wine Vinegar

1 tbs Lime Juice

2-3 tbs vegetable or peanut oil

2 finely shredded carrots

1 tsp salt

6 tablespoons Heinz [Seriously] Good Mayonnaise

1 cooked turkey leg, skin removed, and meat shredded

1 tsp sesame oil

1 tbs light soy sauce

1 tbs mirin or medim sherry

1 tsp minced ginger

4 small soft flour tacos

6-8 mint leaves

1/4 Shredded white cabbage

4 chopped spring onions

1 sliced green chilli

METHOD
1.

First make the asian mayo by making a paste.

Blend the red chili flakes, 1 garlic clove, fresh ginger, chopped shallot coriander stalks and 1 tablespoon of caster sugar.

Then add the thai fish sauce, 3 tablespoons of the white wine vinegar, lime juice and oil and blend until it runs smooth.
4.
When ready to use , stir the paste through the Heinz [Seriously] Good Mato to taste, about 2-3 tablespoons. Set aside.
5.
Put the shredded turkey into a mixing bowl and stir in the soy, sesame, 1 clove of garlic, ginger and mirin.
6.
Make the carrot slaw by mixing the carrots, 3 tablespoons of the white wine vinegar, salt and 1 tablespoon of caster sugar together and leave to macerate until serving.
7.
When ready to serve, flash the soft tacos in a hot pan to warm.
8.
Layer up the shredded cabbage, turkey meat, pickled cabbage and a generous spoonful of the spiced mayo. Garnish with the spring onions and fresh herbs.
9.
Serve with some more Heinz [Seriously] Good Mayonnaise on the side.
