500g Skin on Potatoes cut into wedges

3 tbs Heinz [Seriously] Good Mayonnaise

2 tsp Chipotle Paste

1 Clove of Minced Garlic

1 diced Shallot

1 tbs finely chopped Coriander

1 clove of finely chopped garlic

1/2 tsp smoked paprika

pinch of flaked sea salt

METHOD
1.

Pre-heat oven to 200c.

Put the wedges into cold salted water. Bring to the boil and simmer for 3-4 minutes. Immediately drain and steam dry.
3.
Mix the finely chopped shallots with the garlic, coriander, paprika and sea salt.
4.
Mix the Heinz [Seriously] Good Mayonnaise with the chipotle paste, garlic and toss the potatoes into this.
5.
Now throw into a lightly oiled roasting tray and bake for 20-30 minutes until golden.
6.
Throw into a serving dish, grind over black pepper and sprinkle with the shallot & herb mix.
