1 tin Heinz Beanz Tikka

600g (approximately 3 medium) skinless chicken breasts, cut into 3cm strips

1 tsp salt

1 tsp paprika

1 tsp garam masala

1/2 tsp turmeric

3 garlic cloves, peeled and crushed

3 cm fresh ginger, peeled and grated

1 tbsp groundnut oil

1 onion, peeled and finely sliced

1 red pepper, cut into 3cm chunks

1 tin chopped tomatoes & half tin water

80ml double cream (or alternative of your choice)

2 tbsp/60g low fat plain yogurt

250g wholegrain rice

To serve:

Green chilli, sliced

Small bunch fresh coriander

METHOD
1.

Place chicken in a large bowl, sprinkle over the salt, garam masala, turmeric and paprika, stir well. 

2.
Heat a large, lidded frying pan, add the oil and fry chicken until golden, around 10 minutes. 
3.
Meanwhile cook rice as per pack instructions. 
4.
Remove the chicken from the frying pan and set aside, add the onions to the pan, add onions to the pan and cook for 10 minutes until soft and caramelised, add a dash of water if needed to help soften. 
5.
Add the ginger, garlic and red pepper, cook for a further 5 minutes before adding the tomatoes and water, cover and cook for 10 minutes. 
6.
Return the chicken to the pan and add cream, yogurt and Beanz, stir well and cook for a final 10 minutes. Serve with the rice. 
7.
Finish with the green chilli and coriander.
