Salmon Ceviche Canapés with Herbed Mayonnaise by Fuss Free Flavours

Ingredients:

For the herbed mayonnaise:

6 tbs Heinz [Seriously] Good Mayonnaise

Zest of a lime - finely grated

2 tbs finely chopped coriander

 

For the salmon ceviche:

Juice 2 limes

1 tsp soy sauce

½ fresh ginger finely grated

1 salmon fillet - skin removed and cut into ½ cm slices

Extra coriander to garnish

  • Preparation Time: 10 minutes
  • Cooking Time: 1 hour

Method:

1. Place the mayonnaise, lime zest & coriander into a bowl and mix well. Season to taste with salt and pepper. Cover and keep in the fridge for up to one day.

2. An hour before you serve mix the lime juice, soy sauce and ginger in a bowl and add the salmon, mix and allow the acid in the lime juice to "cook" the salmon. Cut the salmon into triangles.

3. To serve place a piece of the salmon onto a spoon of the herbed mayonnaise and garnish with a coriander leaf.
