Ingredients:

100g carrot, peeled, topped and tailed

200g red cabbage

200g celeriac

50g red onion

50g white onion

1 garlic clove, crushed to a paste

2 granny smith apples (unpeeled)

1 lemon

200ml Heinz [Seriously] Good Mayonnaise

1 small bunch of curly parsley, chopped finely

Salt and pepper

  • Serves: 6

Method:

 

  1. Grate the carrots and thinly slice the red cabbage, celeriac and onions, adding to a large bowl as you go. Add the garlic.
  2. Grate the apple and add to the bowl, squeezing lemon juice over it to stop it browning, and mix all the above together.
  3. Add Heinz [Seriously] Good Mayonnaise and stir through to bind the vegetables.
  4. Garnish with chopped parsley and (if you like) lemon juice for some acidity.
