Heinz Peri Peri Roasted Vegetables

Ingredients:

1 x Red onion (cut into 6 wedges). 

1 x Butternut squash diced. 

1 x Courgette batons. 

1 x Red pepper diced. 

Heinz Peri Peri sauce.

  • Serves: 4

Method:

  1. First prepare all the vegetables and place in a roasting dish.
  2. Roast in a pre-heated oven, 180°C for 20 mins (approx.)
  3. 5 minutes before the end of the cooking, squeeze on 2 tbsp of the Heinz Peri Peri Sauce, give it a stir and return to the oven to glaze.

Great served hot with roasted chicken or fish or cold as a salad.
