Barbecue Rack of Ribs

Ingredients:

1kg rack of long pork ribs

8 tbsp Heinz Sticky Barbecue sauce and extra to serve

250ml orange juice

4 jacket potatoes

2 corn on the cobs, cut in half

  • Serves: 4

Method:

  1. Season both sides of the rack of ribs with black pepper and brush with half of the Heinz Sticky Barbecue sauce
  2. Place in a large roasting  tin and cook for 20 minutes in a preheated 220°C, fan 200°C, gas 7 oven
  3. Remove  and turn the oven down  to 200°C, fan 180°C, gas 6
  4. Pour 500ml water and 250ml orange juice into the tin, cover with foil and place back in the oven and cook for 2 hours
  5. Brush every half and hour with the remaining Heinz Sticky Barbecue sauce, and top up with water if needed
  6. Meanwhile add the potatoes to the  oven  1 hour  before the end of cooking and cook the corn in boiling water until tender
  7. Serve the ribs cut up with jacket potatoes, corn and extra Heinz Sticky Barbecue sauce for dipping
